Lindy’s Deliciously Simple Shrimp & Avocado Salad

SERVES: 6

INGREDIENTS
  • 1 lb cooked wild caught shrimp, peeled, chopped (if large)
  • 2 small – medium avocados, diced
  • 1 medium organic tomato, diced
  • 1/4 cup chopped red or sweet onion
  • 2 limes, juiced or 4 Tbsp bottled lime juice
  • 2 tsp avocado or extra virgin olive oil
  • 1 Tbsp chopped cilantro (optional)
  • 1 jalapeno, seeds removed, diced fine (optional)
  • salt and fresh cracked pepper to taste
DIRECTIONS
  1. In a bowl combine lime juice, onion, oil and salt and pepper. Let it marinate at least 5 minutes to soften the flavor of the onion.
  2. In another bowl combine the shrimp, avocado, tomato, jalapeƱo and cilantro. Lightly toss all the ingredients together. Refrigerate. Enjoy!
