SERVES: 6
INGREDIENTS
- 1 lb cooked wild caught shrimp, peeled, chopped (if large)
- 2 small – medium avocados, diced
- 1 medium organic tomato, diced
- 1/4 cup chopped red or sweet onion
- 2 limes, juiced or 4 Tbsp bottled lime juice
- 2 tsp avocado or extra virgin olive oil
- 1 Tbsp chopped cilantro (optional)
- 1 jalapeno, seeds removed, diced fine (optional)
- salt and fresh cracked pepper to taste
DIRECTIONS
- In a bowl combine lime juice, onion, oil and salt and pepper. Let it marinate at least 5 minutes to soften the flavor of the onion.
- In another bowl combine the shrimp, avocado, tomato, jalapeño and cilantro. Lightly toss all the ingredients together. Refrigerate. Enjoy!
