INGREDIENTS
- Unpeeled, shredded organic zucchini: 4 cups
- 3 cucumbers, peeled and thinly sliced
- 1 small red onion, sliced
- 1/2 cup full fat sour cream (cultured brands like Good Culture is best)
- 2 Tbls. mayonnaise (brands like Chosen Foods, Primal Kitchen & Sir Kensington are best)
- 2 tsp lime juice (I like Lakewood Organic, not-from-concentrate lime juice)
- 2 Tbls. fresh chopped dill or chives (whichever you prefer)
- Salt and fresh cracked black pepper to taste
DIRECTIONS
- Combine cucumber and red onion in a bowl.
- In a small bowl, combine sour cream, mayonnaise, lime juice, chives, salt and pepper. Mix well to combine.
- Stir the dressing into the cucumber and red onion and gently coat.
- For best results, chill salad in fridge for 30 minutes or more to allow the flavor to mingle.
