SERVES: 3-4
INGREDIENTS
- Zucchini (organic is best): 2 medium
- Oil, Avocado or Extra Virgin Olive: 2 Tbls
- Parmesan or Cheddar, finely grated (organic is best): 4 Tbls
- Low carb flour, Almond or Bob’s Red MillTM Baking Flour: 4 Tbls
- Seasoning, Italian, a mixture of oregano, marjoram, thyme, basil etc (I like Simply OrganicTM brand): 2 tsps
- Paprika: ½ tsp
- Salt and pepper to taste
DIRECTIONS
- Preheat the oven to 400F. Line a large baking sheet with parchment paper.
- Cut the ends off the zucchini and discard. Keep the skin on and cut the remaining zucchini into ½ – 1” pieces.
- Place the zucchini into a bowl, and add the oil. Massage the oil around the zucchini.
- In a separate small bowl, mix together the flour, grated cheese, Italian seasoning, salt, pepper and paprika.
- Add the flour mixture to the zucchini bowl, and mix them around to coat. Press flour into the zucchini if coating falls off.
- Place the zucchini on the prepared baking sheet, and season with salt and pepper. Roast for 15 minutes or until starting to brown. If you want them even crispier, place them under a broiler on hot for a few minutes, turning the zucchini as necessary.
